Andrew Henry's favorite meal...


The culinary delights continue!
Andrew Henry is not 100% vegetarian.  He is about 90% vegetarian.  He does not want me to prepare meat dishes at home - believe me, I've asked, and don't mind cooking it, but he says no.  He eats meat at lunch, about once a week (I think).  AH rarely eats red meat and will not eat pork.  This has nothing to do with me.  I am not one of those vegetarians.  I've just never really liked meat and a few years ago decided I didn't want it anymore.  It wasn't hard, as I said, I hardly ever ate it anyway.  My daugher is not a vegetarian and neither are my parents.  Just me.

This brings me to the "favorite" meal at our house.  We had it Saturday afternoon for our lunch/dinner.  That's my plate above and yes I did eat the entire thing.  I said it was lunch AND dinner right?  It consists of fried eggs, black beans, corn tortillas with cheese (AH eats flour tortillas), avocados, tomatoes, yams topped with cranberries, cotija cheese, onions, cilantro, and the most important ingrediant of all.  The thing that makes it happen.  I cannot say enough about this.  Let me introduce you to the reason my husband loves me so much.....the sauce from this recipe is it my friends.  Make it.  Put it on everything.  Thank me later.  I keep it in the fridge like this...


Little tip. If you live near a Trader Joe's, these beans are perfect for this meal.


A few more tips.  I don't slice those yams anymore.  Just dice them up and throw 'em in a frying pan with a little olive oil - much easier than the recipe directions.  Top them with whatever you want.  The cranberries and pecans are very good with them though.  I often serve this with rice or polenta - both rock this meal, which you can serve as breakfast, lunch or dinner!  Let me know if you make it.  Wait, I should mention, the "secret sauce" (that's what AH calls it) has quite a kick.  If you are a wimp (like me) don't add all the chiles - about 1/2.  If it is still too hot, add more vinegar - cuts the spice.

OK - I am SOOOOO going to make this this weekend! We eat something very similar, so I know it will be a HUGE hit with the hubster! Since he is only here for those precious 43 hours, I always try to do something special (that I can fit in between "Daddy Time" as he quite literally stays covered in little boys - as you can imagine!)This might just be the thing to lure him away from baseball, Legos, etc. for time to actually sit down to eat! Can't Wait! Thanks for sharing!

As I said, "there is always something good to eat at Jeanette's!" I don't eat red meat, however I do eat chicken.

Do you cater?? With meals like that it wouldn't be difficult to be a vegetarian! Love your pics!

There IS always something good to eat at Jeanette's! I love love love this meal. I have to say, I am the only one in the family who doesn't like the secret sauce, but the rest = perfection!

Thanks Beatnheart! I used to make this with grilled chicken thighs, so if you eat chicken, that's great. Thigh is better with this dish, more flavor to stand up to all the other stuff that's going on.
